OCAK Hasat işlemi tamamlanmış ise sürüm yapılır. Toprak eğiminde düzleştirme gerekliliği olan zeytinlikler sürülür. Tavı iyi olan zeytinlerin toprağı derince (10 – 12 cm) işlenmeye başlanmalıdır.
