Belki \u015fimdi de yurt d\u0131\u015f\u0131na bu ama\u00e7la zeytinya\u011f\u0131 ihracat\u0131 yap\u0131lmaktad\u0131r. Oysa naturel zeytinya\u011f\u0131nda zeytin meyvesinin i\u00e7erdi\u011fi k\u00fc\u00e7\u00fck molek\u00fcll\u00fc aromatik bile\u015fiklerin yan\u0131 s\u0131ra, fenolik bile\u015fikler (\u00e7ok faydal\u0131 olan polifenoller), squalen , \u2026 gibi hidrokarbonlar, b\u00fcy\u00fck molek\u00fcll\u00fc ya\u011f asidi esterleri\u2026 gibi bir s\u00fcr\u00fc bile\u015fik ihtiva eder. Bu nedenle de havalar so\u011fuyunca ya da buzdolab\u0131na girdi\u011finde donar. Ama di\u011fer ya\u011flar gibi y\u00fcksek miktarda fosfolipit ve wax i\u00e7ermez. Yani naturel zeytinya\u011f\u0131nda wax maksimum 250 ppm iken rafine, vinterize ay\u00e7i\u00e7e\u011fi ya\u011f\u0131nda wax yakla\u015f\u0131k 600ppm bulunmaktad\u0131r.<\/p>\n<p>Yaln\u0131z \u00fclkemizde zeytin s\u0131kma tesislerinde bir al\u0131\u015fkanl\u0131k var. Bu ve bunun gibi hatalar hem ya\u011fa ge\u00e7en waxlar\u0131n miktar\u0131n\u0131 artt\u0131rmakta, hem hem de polifenoller, tokoferoller gibi faydal\u0131 bile\u015fiklerin kayb\u0131na ve oleoropein nedeniyle ac\u0131l\u0131k ve genizde yakma meydana gelmesine sebep olunmaktad\u0131r.<\/p>\n<p>\u00dclkemizde zeytinya\u011f\u0131n\u0131n beslenme \u00fczerindeki etkileri konusunda son y\u0131llarda yap\u0131lm\u0131\u015f herhangi bir ara\u015ft\u0131rma var m\u0131 yok mu bilmiyorum.
